From the Chocolate Studio: A Taste of Canada at the G7 Summit
This summer, Le Chocolatier had the extraordinary honour of representing Canada’s rich culinary heritage at the G7 Summit—a global gathering of world leaders hosted in the Canadian Rockies.
I was invited to create and host an exclusive chocolate tasting event at the Pomeroy Kananaskis Mountain Lodge, designed specifically for the spouses of the G7 leaders. The experience was a rare opportunity to share not just my passion for chocolate, but also the flavours, stories, and ingredients that make Alberta and Canada so uniquely beautiful.
A Collection Crafted for World Leaders
For this prestigious occasion, I created six entirely new chocolate recipes—each one handcrafted to showcase a uniquely Canadian or Alberta-grown ingredient. Every flavour told a story, reflecting the landscapes, traditions, and wild beauty of our country:

Toasted Juniper Berries – Foraged from the Canadian Rocky Mountains, delivering an aromatic, earthy note that captures the alpine air.

Creamed Alberta Wildflower Honey – Smooth and golden, celebrating the province’s vibrant fields.

Alberta Birch Syrup – Deep, caramel-like sweetness from local birch trees, a true northern delicacy.

Wild Foraged Alberta Wild Roses & Spruce Tips – Floral and resinous, embodying the fragrant forests and meadows of our mountain home.
The Art of Presentation
The chocolates were presented in a fully edible chocolate box, itself a masterpiece. The lid featured a hand-painted chocolate image of the Three Sisters Mountain Range, a tribute to Canmore, Alberta, where my chocolate shop is located. Every detail—from the artistic brushstrokes to the hidden notes of flavour—was crafted to spark conversation and leave a lasting impression.
A Culinary Ambassador for Canada
Hosting this tasting for such an influential audience was more than an event—it was a moment of cultural exchange. I was able to speak about the origins of each ingredient, the sustainable practices of our local producers, and the artistry of chocolate-making in Canada.
The experience was intimate, sensory, and deeply personal—a chance to invite the world to “taste” the essence of our land.
