A Taste of the Rockies: The Story Behind Canmore’s Handcrafted Belgian Chocolate

Not all dreams start with escape—some begin with ambition. Years ago, I came to the Bow Valley not to slow down, but to sharpen my skills. As a young pastry chef, I was drawn to the energy of fine dining kitchens and the challenge of high-level hospitality in one of Canada’s most breathtaking destinations. I didn’t know it then, but my path through Michelin-calibre kitchens would eventually lead to a deeper kind of artistry—one poured, piped, and painted in chocolate.

Today, I own and operate Le Chocolatier, a women-owned chocolate studio located in the heart of Canmore, just a short (and slightly uphill!) e-bike ride from downtown. What started as a passion project has evolved into a destination for handcrafted Belgian chocolate, unforgettable tasting experiences, and luxury chocolate gifts that travel across Canada and beyond.
