Why Single-Origin Chocolate?

Unlike commercial blends, single-origin chocolate comes from one specific farm or region, letting the unique terroir shine. Each bar in your kit has been chosen for a distinct reason—whether it’s the variety of cacao, the fermentation style, a rare roasting method, or a twist in ingredients, such as Brazilian panela sugar or freeze-dried raspberries in place of milk.

What Cocoa Percentage Really Means

The percentage on a chocolate bar tells you the total content of cocoa solids and cocoa butter—it does not define sweetness or bitterness. In fact, bitterness in chocolate is often the result of heavy dark roasting used to mask inconsistent beans.
Our chocolates are light to medium roasted to protect the delicate flavors developed during fermentation and natural growth. The result? Complexity, elegance, and a clear sense of origin in every bite.

How to Taste Like a Chocolatier

Fine chocolate deserves patience—just like fine wine.

  1. Order of Tasting: Begin with the darkest chocolate and work toward the lightest. This ensures your palate remains sensitive to subtle notes, rather than comparing everything to the sweetness of milk or white chocolate.

  2. Observe: Look for differences in color—deep mahogany, golden brown, or a reddish hue—each hinting at the flavor within.

  3. Decant in Your Mouth: Place a small piece on your tongue and let it soften for 15–25 seconds before chewing. Breathe in through your nose to fully engage your senses.

  4. Savor: Notice how flavors evolve—fruity, nutty, floral, or spiced layers may appear one after the other.
